Mint and Potato Raita Recipe
Mint and Potato Raita is a refreshing, creamy, and flavorful yogurt-based dish that combines the coolness of mint with the earthiness of potatoes. It’s a great accompaniment to spicy Indian dishes, especially biryanis, pulaos, and kebabs. The creamy texture of the yogurt, the mild flavor of the potatoes, and the freshness of mint make this raita a delicious side dish.
Ingredients:
1 medium potato, boiled and mashed
1 cup plain yogurt (full-fat or low-fat)
1/4 cup fresh mint leaves, finely chopped (or blended into a paste)
1/4 tsp roasted cumin powder
1/4 tsp black salt (or regular salt, to taste)
1/4 tsp regular salt (to taste)
1/4 tsp red chili powder (optional)
1/2 tsp lemon juice (optional)
1-2 green chilies, finely chopped (optional, for heat)
Fresh cilantro (coriander) leaves, chopped (for garnish)
1/2 tsp sugar (optional, to balance the flavor)
Instructions:
Prepare the Potato:
Peel and boil the potato in water until soft. Once cooled, mash it until smooth. If you prefer a chunkier texture, you can mash it lightly.
Prepare the Yogurt:
In a mixing bowl, whisk the yogurt until smooth and creamy. If you prefer a thinner consistency, add a little water or milk to adjust.
Blend the Mint:
If you’re using fresh mint leaves, finely chop them or blend them into a smooth paste using a little water. The mint should be aromatic and fresh to give the raita its signature refreshing taste.
Combine Ingredients:
Add the mashed potato into the yogurt and mix well to ensure it’s evenly incorporated.
Add the chopped or blended mint leaves, roasted cumin powder, black salt, regular salt, and red chili powder (if using). Stir until well combined.
Optional Adjustments:
If you like your raita a bit tangy, add a teaspoon of lemon juice. For a subtle sweetness, you can add a pinch of sugar to balance the flavors.
Add finely chopped green chilies if you want some heat.
Taste and Adjust:
Taste your raita and adjust the seasoning—more salt, mint, or lime juice, as per your preference.
Garnish and Serve:
Garnish the raita with freshly chopped cilantro (coriander) leaves for color and freshness.
Chill and Serve:
Refrigerate for 30 minutes to an hour to allow the flavors to meld together.
Tips:
Vegan Version: You can use coconut or almond yogurt for a dairy-free version of this raita.
Texture: If you like a smoother texture, you can blend the potato and yogurt together before adding the mint.
Mint Paste: If you don’t have fresh mint, you can also use mint chutney as a shortcut. Just add a spoonful of mint chutney to the yogurt and potato mixture for added flavor.
