Nut Ladoo Recipe

Here’s a simple and healthy recipe for Nut Ladoo, a delicious and nutritious Indian sweet made with a variety of nuts, dried fruits, and ghee. It’s perfect for a quick energy boost or a festive treat!

Ingredients:

1 cup mixed nuts (cashews, almonds, pistachios, walnuts, or any combination)

¼ cup desiccated coconut (optional, for texture)

¼ cup dried fruits (raisins, dates, or apricots, chopped)

2 tbsp ghee (clarified butter)

2 tbsp honey or jaggery (or to taste)

1 tsp cardamom powder

A pinch of saffron strands (optional)

1 tbsp pumpkin seeds or sunflower seeds (optional for crunch)

1 tbsp chia seeds or flaxseeds (optional for added nutrition)

Instructions:

Prepare the Nuts:

Roughly chop the mixed nuts (cashews, almonds, pistachios, etc.) into small pieces. You can leave some nuts whole for added texture, but chopping them helps with binding the ladoos.

Toast the Nuts (Optional):

In a dry pan, lightly toast the nuts over medium heat for 3-4 minutes until they become slightly fragrant. Be careful not to burn them. This step enhances the flavor of the nuts.

Prepare Dried Fruits:

If you’re using dried fruits like raisins or dates, chop them into smaller pieces to ensure they mix evenly with the nuts.

Heat Ghee:

In a large pan, heat the ghee over medium heat. Once it melts, add the chopped nuts, dried fruits, and any seeds you’re using (like pumpkin or sunflower seeds). Stir everything together for 2-3 minutes, allowing the nuts and fruits to lightly caramelize and soften.

Add Sweetener:

Add the honey or jaggery to the mixture and stir until it melts and combines with the ghee and nuts. Allow it to cook for another 2-3 minutes.

Add Cardamom and Saffron:

Add the cardamom powder and saffron strands (if using) to the mixture. Stir well to infuse the flavors.

Cool Slightly:

Allow the mixture to cool down a bit, just enough for it to be manageable with your hands, but not too cold. You want it to be warm for shaping the ladoos.

Shape the Ladoos:

Grease your hands with a little ghee and take small portions of the nut mixture. Roll them into smooth, round balls (ladoos).

Let Them Set:

Place the ladoos on a plate and allow them to set for 15-20 minutes. They will harden slightly as they cool.

Serve and Enjoy:

Your nut ladoos are ready to enjoy! Store them in an airtight container at room temperature for up to a week or refrigerate for longer shelf life.

Tips:

Sweetener: If you prefer a sugar-free version, you can replace honey or jaggery with a natural sweetener like stevia or coconut sugar. Adjust the sweetness to your taste.

Binding: If the mixture feels a bit too dry, you can add a bit more ghee or a tablespoon of warm milk to help it bind.

Add-ins: Feel free to add chia seeds, flaxseeds, or even dried coconut flakes for an extra boost of nutrition.

Vegan Option: For a vegan version, use coconut oil instead of ghee and a plant-based sweetener like maple syrup.

These nut ladoos are packed with healthy fats, protein, and fiber, making them a perfect snack to keep you energized throughout the day. Enjoy!
